Explore Oxbow’s vibrant forest trails and farm fields as you reimagine weeds—not as nuisances, but as nourishment.
In this immersive workshop, facilitated by Rosa Vissers of Hildegard Ferments & Botanicals, you’ll learn to see so-called “weeds” in a whole new light—as healers, snacks, and allies in your garden. Walk, forage, taste, and brew tea from plants you once overlooked. Perfect for nature lovers, gardeners, and curious folks, this experience invites you to reconnect with the land and rediscover what’s been growing around you all along.
You'll Experience:
Fresh Perspectives
– Rethink what makes a plant a “weed” by exploring how context shapes our understanding of the natural world.
Foraging & Identification Practice
– Learn to confidently identify edible and medicinal weeds, and understand when and how to harvest them responsibly.
Hands-On Harvesting
– Walk, gather, and prepare wild plants during an interactive exploration through Oxbow’s fields and forests.

About Your Facilitator:
Rosa Vissers
is the co-owner of
Hildegard Ferments & Botanicals
, the smallest brewery and apothecary in Seattle. Guided by the seasons, she crafts a diverse array of plant medicines and offers classes + nature walks to connect people to themselves and the plants. She’s currently studying to become a clinical herbalist.
Born and raised in The Netherlands, Rosa is also a movement artist and yoga instructor. She deeply believes in the intelligence of our bodies and the plants. She is the proud mama of an amazing daughter.
