海涵火锅 Hai Han Huo Guo or hotpot is a specialty Chinese restaurant on Royal Caribbean’s Spectrum of the Seas cruise. I am grateful to have the opportunity to eat in the restaurant in the middle of East China Sea. It has variety of meat, vegetables, fruits, and desserts 🍮 and ocean view. The source the restaurant uses is from Haidilao. Although due to limitations on the ocean, they cannot have live fish and everything is previously frozen, for a cruise, it’s a good alternative for me. I have been on many cruise. Chinese restaurant on a cruise is rare. I enjoyed my dinner. At the opening of Yudefu's first Shanghai store, I met Yu Fusheng, an intangible cultural heritage inheritor known as "Beijing's Number One Knife." Yudefu was founded in 1998 on Guijie Street in Beijing. The original shop had only 6 or 7 tables and didn't rely on marketing, yet it had lines out the door year-round. Since 2010, it has received the Beijing Michelin Plate award for 7 consecutive years. Yu Fusheng's intangible cultural heritage technique for hand-slicing mutton has been passed down through his family. His grandfather, Yu Delong, was a head butcher for decades at legendary restaurants like Donglaishun and Hongbinlou. Yu Fusheng began learning the craft from his grandfather at age 16 and went on to win the meat-cutting category of the Beijing Vocational Skills Competition for 5 consecutive years, which is how he earned the title of "Beijing's Number One Knife." Today at the restaurant, I ordered their 4 core signature hand-sliced mutton dishes: Da Sancha, Xiao Sancha, Huangguatiao, and Modang. Yudefu maintains strict selection standards, using only 1.5-year-old wether sheep from Inner Mongolia and exclusively sourcing these 4 specific cuts, rejecting all others. These 4 cuts are all hand-sliced to order with meticulous knife work. Each plate can be held upright without the meat falling off, which serves as an objective standard for both freshness and skill. Yudefu's confidence stems from its commitment to the traditional Beijing charcoal-fired copper pot with a clear broth. I ordered the original clear broth, which contains only scallion segments, garlic slices, and a few dried shrimp. There are no heavy seasonings; it relies entirely on the quality of the ingredients rather than the dipping sauce, which is the ultimate test of quality for traditional Beijing hot pot. The Shanghai location offers exclusive features not found at the Beijing flagship store, such as the newly added East China Sea seafood platter, which features fresh local catch. This means you can enjoy Inner Mongolian mutton and East China Sea seafood together in Shanghai—a perfect combination of land and sea delicacies. In addition to the copper pot hot pot, I also tried their 300-year-old intangible cultural heritage Zhizi BBQ, which is grilled to order over charcoal on an iron griddle. There are two styles: "civilized" and "martial." The most authentic way is the "martial" style, where you use long chopsticks to flip the meat yourself. It creates a great atmosphere and is a traditional dining method passed down in old Beijing. In addition to the 4 mutton dishes and the seafood, I also ordered fresh-sliced beef ribeye, fresh tripe, mushrooms, pickled vegetables, soy products, and a vegetable platter. For staples, I had the mutton fried rice and handmade noodles, finishing the meal perfectly with traditional Beijing milk skin yogurt.
