I went to Tenfeng, a very old-fashioned soy sauce ramen restaurant. Their slogan is: "Tougher! Oilier! Saltier!!" I ordered the signature 135 ramen which is "harder, oilier and saltier", and the めんばり which is "harder, oilier and saltier" than "harder, oilier and saltier". It's true...very hard, oily and salty. The noodles looked unattractive, not even an egg. The soup is a little clear, with oily flowers floating on it. The noodles are generally the same as those sold in the market. There is no difference at all, except that the texture is crisper and tougher. This is just a standard bowl of soy sauce ramen commonly found in Japanese restaurants, but... "harder, oilier and saltier". However, it smells so good. The soup base has an indescribable aroma and is delicious. Although you know it is very oily, the solution you can think of is not to throw away the bowl of noodles, but to find some rice and mix it in to relieve the greasiness. The atmosphere in the shop is also very strange. The white-haired shop owner has been staring at the noodles in the pot intently. The diners glance at him and see that he is the kind of customer this kind of shop should have.
