正统的江户前寿司。 逆推大将星山师傅的履历。 曾在京都寿司名店「鮨 まつもと」(米其林1星)做学徒5年。➠「まつもと」的大将出身于东京新桥名店「新ばし しみづ」➠那么「しみづ」再往系谱追溯的话,那就是「神田 鶴八」➠「鶴八」的初代掌门人,那可是江湖中人称「握寿司的神样」的超名气寿司职人。所以归根结底,「ほしやま」就是正宗的江户前流派。 再来说说鹤八一门的星鳗,「入口即化」的代名词。星山师傅自然也是得其制作精髓,但是照祖师爷的水准还是差了那么一点。 个头精致纤细,红醋味道明显,醋饭属于偏硬那一派。味道赞的几贯真的惊艳,鰆,縞鰺。光物味道略差。
