During this workshop we will come into contact with an Umbrian tradition: butchery. That of the pork butcher is a very ancient profession, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. Today our chef will talk about the anatomy of the pig, the different types of cuts and he will teach us all the secrets of this culinary tradition: from the basic techniques to the processing of the meat, up to the salting and maturing of the meat , and the making of sausages . At the end, we will be able to enjoy a well-deserved lunch with the results of our work accompanied by other typical Umbrian products!
The ATV ride will give you the chance to discover an unexpected side of Umbria: you will see the nature surrounding Assisi in Mount Subasio in an ATV with a pleasant stop in the forest for an aperitif included. The activity is guided and has a duration of about 1 hour along a naturalistic trail of great beauty.
