The Old Canal (Oudegracht) that runs through the center of Utrecht, Netherlands, begins in the southeast of the city. Here the original main riverbed of the Rhine and a new main stream of the Rhine join to enter the center of town. When the city's sluice system was completed in 1275, the water level remained constant, allowing permanent dry wine cellars and new quays to be built above the water level, thus forming a typical quay below street level. Warehouses used to line the canal. Today, many of these warehouses have been converted into restaurants and cafes.
