“Ise Udon”, a famous local food in Mie Prefecture

If you have a chance to visit Ise City, Mie Prefecture, we would like to recommend Ise's famous food, "Ise Udon". Ise's soul food is characterized by its thick and chewy noodles, served with a black sauce made from a mixture of soup stock and tamari soy sauce. Ise Udon is a dish that is used to entertain guests who have traveled far to visit Ise Shrine. It has been served to entertain guests since the Edo period. Most people think that the taste is the same everywhere, but the soup and toppings of each shop are different, showing the uniqueness of each shop. The shop we went to today is called "Nakai-ya", a long-established udon shop that still maintains the original taste. The special sauce is made from soup stock made from dried bonito, dried mackerel, kombu, and dried bonito or niboshi, seasoned with sashimi soy sauce. When you enter the shop, the staff will take you to your table and give you a paper to check off the food you want to order. When you have chosen, call the staff to take your order. We ordered "Ise Udon", the famous original udon, and "Kitsune Udon", fried tofu udon. From the first bite, you can feel that the taste is different from anywhere else. The udon noodles here are bigger and flatter than normal udon, chewy and soft, topped with a slightly sweet yoghurt sauce. The other fried tofu udon has a well-rounded soup.
