In the old town, you'll find numerous restaurants offering traditional Lyonnais cuisine, known as "bouchons." These casual dining spots serve set menus at reasonable prices. However, be aware that many dishes feature organ meats, which might not be to everyone's taste. I even ended up eating dishes without knowing exactly what they were—quite an adventure! 😂 【Quenelle】 Quenelle is a signature Lyonnais dish made from pike fish (brochet) ground into a paste, shaped into cylinders, and baked in the oven. It's served with Sauce Nantua, a creamy sauce made from crayfish stock. 【Pig Nose Cartilage Salad】 This salad features thinly sliced pig nose meat and cartilage, seasoned with mayonnaise or vinaigrette. It has a crunchy texture and a unique aroma and flavor. 【Salade Lyonnaise】 A Lyon-style salad consisting of lettuce, garlic-flavored grilled croutons, poached eggs, and thick-cut bacon. 【Andouillette】 A dish made from pork intestines marinated in spices and stuffed into pork casing. Its strong flavor was too much for me to handle, and I couldn't finish it. Lesson learned—next time, I'll be more careful when ordering!
