Flying with EVA Air, we arrived at New Chitose Airport in Hokkaido. The atmosphere here feels distinctly different. It is not only a breeding base for dairy cows and heavy stallions, but also a vast grassland. As soon as you walk in, it feels like you have entered the world of "The Little Prince" or Ghibli animation. The most amazing thing is the birch forest road (white birch and wood) leading into the ranch. The entire straight road is lined with birch trees. The trunks are as white as snow, shining softly under the sun. It is one of the classic photo spots in Hokkaido.

Dinner at Seijakubou is, as its name suggests, a blissful time where "tranquility" and "deliciousness" intersect. In a tranquil private room that is set apart from the outside world, kaiseki cuisine is served that incorporates the bounty of Hokkaido's land and sea. Each dish is carefully composed as the course unfolds, gently stimulating the senses of sight, smell, and taste. For example, the appetizers made with seasonal mountain vegetables and locally caught seafood are not only beautifully presented, but also have an exquisite taste that makes the most of the individuality of the ingredients. The aroma of the dashi broth rising from the warm soup permeates the body, releasing tension, and the grilled and boiled dishes are cooked and seasoned with meticulous craftsmanship that makes you gasp in admiration.
