I started to “fall into” the world of Omakase from the first time I ate at Fume (HCMC). And Yuzu is the second restaurant in Hanoi where I felt the full sophistication – not only in taste, but also in the atmosphere, light, scent, and emotional presence of the chefs.
Coincidentally, during Tet, I stayed at a hotel right next to Yuzu Omakase HCMC – at that time, I only saw the familiar name but did not dare to step in. It was not until I returned to Hanoi, seeing the group sharing a lot, that I decided: I had to try it once – to see if Omakase at Yuzu really touches the heart as rumored.
🍀Book a table & start with an emotional start:
I chose The Moment menu – 18 dishes for 4 million/person. At first, I was hesitant between The Moment and The Journey (6.5 million), but I thought "for the first time, let's start the journey gently".
Booking a table was very easy via Zalo, deposit 50%, there is a link to pay by credit card. The restaurant also asked carefully: "Do you have any allergies?", "Is there any special occasion for the kitchen to prepare?" - making me feel very taken care of before entering.
That night, I arrived 15 minutes early. Sitting on the 1st floor, being served tea, chatting gently, and also having my photos taken very carefully. The space was quiet, the lighting was beautiful - creating a very "embracing" feeling before entering the official experience.
🥂 Culinary journey - telling stories with all the senses:
There are only 13 seats. Each person is a piece of the culinary journey told with all the meticulousness.
The Moment is a symphony of taste with premium ingredients such as:
• Hon Maguro (upper body tuna)
• Bafun Uni (Hokkaido sea urchin)
• Amur Caviar (caviar)
• Wagyu A5 from Hyogo
• Alba Truffle
I chose to drink a glass of mild Sakura sake, not ordering a whole bottle to stay awake but still blend with the food. The tea that comes with each dish is also very delicate.
❤️The most impressive? The climax in the middle of the journey:
I was especially impressed with the 4 dishes in the middle of the menu, each dish has its own mark, like a chapter that pushes emotions to a new height:
9. Otoro & Iberico - a smooth fatty taste combining tuna belly and salted pork, full and rich in flavor.
10. Hokkaido Uni & Amur Caviar - an "explosion" with elegant salty taste and melt-in-your-mouth texture.
11. Wagyu Monaka Rice – a unique creation, wagyu is sandwiched in a crispy Monaka cake, both strange and familiar.
12. Negitoro – the dish that impressed me the most, with many layers of ingredients placed on a piece of seaweed – from fatty tuna, sea urchin, salmon eggs, caviar, dotted with fresh flowers and… a “golden spray” to close the visual. A true work of art.
