After arriving in Shaxian, I walked around the snack culture city and felt that most of the shops were newly opened, lacking the old taste of the time-honored shops. I decisively went to the county government to check in at the old shops. The first one was the Miaomen flat meat in Jindingcheng. The storefront was small, the store was not big, the room was small, and the table was small, but it had the old taste. A portion of the signature flat meat, with soup, thin skin and large fillings, the hind leg meat was pounded very hard, fresh and chewy, and the reputation was well-deserved, a big thumbs up! The price is also very affordable, top recommendation.

On my first night in Shaxian, I headed to one of the Shaxian snack shops. It was a bit chilly due to the rain that evening. The shop wasn't crowded; there were only the two of us. Looking at the sign on the wall that read "Inheritor of Shaxian Snack Craftsmanship," I thought, "This place shouldn't be going anywhere!" ✔️Bianshi (flatbread) - Fujian flatbread is similar to wontons and dumplings. I watched the lady making them live. The thin wrapper encloses a red meat paste. The resulting flatbread is incredibly meaty and satisfying. ✔️Taro dumplings - The taro dumplings I had were slightly sweet. They're made with taro and sweet potato starch, and the filling seems to include peanuts. The wrapper is much thicker than the flatbread wrapper. ✔️Tofu glutinous rice balls - I've tried these before when visiting the ancient town of Fu. Tofu is wrapped with meat and rolled in a bowl of cornstarch. ✔️Shumai (steamed pork belly) - The shumai in Shaxian County is unlike any I've ever had. The translucent wrapper is filled with vermicelli slices fried in lard. Their spicy duck head is tender and flavorful, and the braised dishes are also quite good. This time I went to Shaxian Snacks, I didn't try the clay pot or steamed dumplings anymore.
