A basket of 8 buns is perfect for two people, and each person gets a bowl of beef vermicelli soup to fill them up. Their buns are delicious, generously juicy, and with the vinegar and chili oil, they're incredibly fragrant! 🍽️Qingshan Niangpi (Huangzhong Road Branch) 💰️7 yuan/person 💗The Niangpi is incredibly delicious, with a fantastic seasoning and generous portions. The yogurt is incredibly flavorful, with a rich, creamy aroma and a rich, rich flavor. 🍽️Halal Songdik Handmade Noodles (Xinghai Road Main Branch) 💰️17 yuan/person 💗This is a chain store specializing in noodles in downtown Xining. The decor is very nice, and they only sell noodles and paozhang noodles. Thinking about it now makes me want to cry. 🍽️Quan'ertou Offal (Xiado Mansion Branch) 💰️26 yuan/person 💗I ordered a mutton offal soup, a beef offal soup, a lamb brain, and two white pancakes. The soup was authentic and flavorful, and the lamb head was cleaned very cleanly. The offal didn't contain lamb liver, but rather lamb intestines, lamb head, lamb heart, and lamb tongue.
The night before, a local diner sharing my table recommended za suey, a dish considered the most prestigious breakfast dish among locals. This helpful local even chose a breakfast spot based on my hotel's location: Quan'ertou Za Suey (Xiadu Mansion Branch), located in Shop 02, Unit 1, Building 1, Xiadu Mansion East District, Xiadu Mansion, right next to the James Joyce Coffetel (Xiadu Avenue Mojia Street Branch). When I arrived at 6:30 AM, the place was already open. Back home, I usually eat mutton offal soup more often than beef offal soup, so I ordered a small bowl of beef offal for 17 yuan. I didn't order a main course, and a steamed bun came with it. For the average person, a bowl of za suey plus the accompanying steamed bun should be more than enough. The beef offal arrived steaming hot, and the broth was rich and authentic. The offal was cut into large chunks, fresh, odorless, and perfectly soft, making it a satisfying meal. Upon arriving in Xining, the plateau breeze carried with it an alluring aroma. Our first stop was the renowned "Qunke Changchun Garden," where our friends took us. The "hand-pulled lamb" was the star attraction! Half a pound cold, half a pound hot, the hot meat bursts with fat and fragrance as soon as you take a bite! Tender, tender, and without a hint of mutton, the rich flavor swirled around your tongue, seeming to epitomize the vastness and warmth of the plateau. The cold meat, paired with crisp barley wine, was as pure as a plateau stream, eclipsing the entire table of delicacies. The next morning, following the sounds of the city, we visited "Quan'ertou," a small abode near the mosque. Unfortunately, the lamb offal soup, like drifting clouds on the plateau, vanished without a trace. Both days, we arrived after 9:00 a.m., leaving only steaming beef offal. The offal is plentiful, the broth as strong as a strong wind, and the tangy aftertaste lingers in the air, becoming the deepest lingering memory after leaving. Perhaps the best flavors truly require a touch of regret to mellow out. Driven by cravings, I finally arrived at Yangjia Hulutou on Bayi Road. This old, simple shop is open only until the afternoon. The so-called "hulutou" refers to the speciality of pig intestines. In a small bowl of rich broth, the plump intestines blend with the oily, crispy, and chewy flavor, creating a sour and spicy flavor like the sunshine on the plateau! Break open the complimentary hot sesame seed bun and dip it into the broth. The wheat aroma and the oily texture blend together, instantly soothing a hungry stomach and offering the most generous and tangy warmth of the plateau. The imprint between lips and teeth is the most profound record of Xining's landscape. The flavors of Xining are rough, rich, and unadulterated, reaching the heart.
