The foie gras ice cream is so special. AQUAVIT recommends that you make a reservation if you want to go. The restaurant is not very large. We made a reservation and came later, so there was no waiting. The restaurant was basically full.

The overall seasoning follows the Nordic heavy smoking method and also respects the traditional use of various herbs, such as the extensive use of elderflower leaves, flowers and fruits.
