I couldn't wait to take a bite. It was very cold, but it tasted better when it was cold. The sauce was well-seasoned and the raw intestines didn't have any offal smell. It was chewy and refreshing. The mustard sauce here is a must, not too spicy but quite flavorful! It's better to try it directly to know how special it is.
