Itadakimasu and let me bring you to Fukuzuka, a sushi restaurant with a secret entrance in Tokyo. They are located within Shinjuku city and the nearest station is Lidabashi station. This restaurant is run by Chef Fukusuka and he is an expert in serving his curated dishes in varying temperature. They are open on selected days for dinner service so a reservation will be required. It is also easy to make a reservation via their website. But they only have like 4 limited seats at the counter so you will need to make reservations in advance. At every omakase, a menu is not presented but some chef will provide a printed menu for every guest and you can bring this menu back as souvenir. Each ingredient is specially selected and sourced domestically from other prefecture or from small farmers. This method ensures high quality ingredients for every meal. The coffee is made from beans roasted by Obscura Coffee Roasters in Sangenjaya. I ordered a hand-drip Costa Rica, which is full of honey aroma and a slight apple-flavored acidity, rich in fragrance.
