Yaoyoshino Udon will impress soba lovers

Founded in 1903, Gamagori's "Yawoyoshi" uses wheat flour from a local mill and takes the time to let the noodles rest for two days. The cold udon noodles, freshly boiled and well-done, were shiny and chewy. They were chewy yet firm, and were a big hit with my family. The dipping sauce, which was filled with lots of small nameko mushrooms, was also good. I'm definitely a soba fan, but I recommend this one.
