The Huaiyang-style "Da Zhu Gansi" (shredded dried tofu in broth) is rich in ingredients, has a thick and flavorful soup, a soft texture, and a delicious taste. It's definitely a top-notch dish. The "Chai Hui Yu Geng" (fish head and tofu soup) is thick, savory, and full of fish. The "Hei Suan Hong Shao He Man" (braised river eel with black garlic) has an attractive color and is prepared in a classic Shanghai style. It's sweet, savory, and the eel melts in your mouth.
